Make sure seeds are dried by baking on cookie sheet in 250F oven for an hour.
Mix 3 Tablespoons Sugar, Ginger and Cinnamon in a medium mixing bowl and set aside.
Place Peanut Oil, 2 Tablespoons Sugar and the Pumpkin Seeds in a large skillet on medium high heat. Stir constantly or seeds will burn. Cook until sugar is dissolved and seeds are slightly browned (they may start to make a popping sound like popcorn-that is okay).
Remove from heat and immediately pour into prepared bowl of sugar, ginger and cinnamon. Stir until the seeds are coated with the mixture. Cool, eat and enjoy!
