Note: This makes two pies. If you have a big enough blender you can mix it all at once.
Preheat oven to 350F.
Cut pumpkin in half, remove stem, seeds and "strings".
Place both halves, open sides down, in roasting pan with enough water to come 1/4 inch up the sides.
Bake for about an hour (pumpkin skin should darken and wrinkled).
Remove from pan and let cool for 1/2 to 1 hour.
Preheat oven to 450F.
Remove 2 cups of Pumpkin Meat and place in blender with half of Salt, Ginger, Cinnamon, Nutmeg, Sweetened Condensed Milk and 3 Eggs. Puree until well mixed.
Pour into 9" Pie Shell.
Bake in 450F oven for 10 minutes then reduce heat to 325F and bake for another 35-45 minutes, or until mixture doesn't adhere to knife inserted into center of pie.
