Preheat oven to 400F.
Core and slice apples, 32 sections per apple.
Mix Sugar, Flour, Nutmeg and Cinnamon in a small bowl.
Rub some of the Sugar mixture into the bottom pastry shell.
Arrange Apples in pie shell.
Sprinkle remaining Sugar mixture over top of apples.
Spread pieces of Butter around top of pie.
Place top pastry layer on pie, crimp edges together.
Cut a few slits in the top to allow steam to escape.
Place pie pan on baking tray to catch drips.
Bake for 45 minutes to an hour, until apples are soft.
Cool on wire rack.
